Which camera should I buy?

This fall I am studying abroad in Kenya and Tanzania. I will be spending a lot of time in the Serengeti and my whole time I'll be staying in research camps or in a tent. (There will be some electricity.) I'm a college student so I'm not exactly rolling in the Benjamins. I have a digital camera now, but it really does not take photos of the quality I would like to document my time in Africa. I like taking pictures and have a good eye for things like that but I'm totally not a photographer by trade or even as a hobby so I don't really know much about cameras. A lot of my friends like to dabble in photgraphy and have semi-nice cameras which I've seen and used. (Usually they are Nikkon or Canon.) Basically I just want a few suggestions on a camera that is a nice balance between price and quality. (Perhaps anywhere from 2-7 hundred)
